Although chili and cookies may sound like a dubious combination they can come together to make quite a delicious treat. The combination of heat and sweet is the perfect prescription for a cold and dreary day or and excellent way to wrap up the day along with a cup of tea or whatever your personal favorite beverage may be. Whether you like it hot enough to melt your mouth or just a hint of heat, super sweet and rich or hearty and savory, there is sure to be a recipe to fit your desires.
While some recipes call for the use of chili powder, more traditional recipes opt for real, fresh ground chili peppers. One particular recipe recommends two tablespoons for a mild cookie, three tbsp. for medium heat, and four tbsp. for a mouth searing chili cookie. Of course the usual cookie ingredients are used; 1/2 lb. unsalted butter, 1 cup light brown sugar, 3/4 cup granulated white sugar, 2 whole beaten eggs, 1 tbsp. vanilla, 2 1/2 cups all purpose flower, 1/2 tsp. baking powder, 1/2 tsp. baking soda, and of course the chili peppers. Some recipes offer ideas for optional ingredients such as chocolate chips, cocoa, or various kinds of nuts.
Obviously, no cookie is complete until it has been baked. For the recipe mentioned above the recommended oven temperature is 375 degrees farenheit. The dry and wet ingredients should be mixed seperately. Onced mixed you may start gradually adding the dry ingredients to the wet making sure to integrate the ingredients thoroughly. When a smooth consistency is achieved it is now time to bake! Simply scoop the chili cookie dough into 2 inch balls and place on a buttered baking sheet. The cookies should be baked on the bottom rack until golden brown. This should take about 10 minutes. Once the cookies are done take them from the oven and let them cool for several minutes.
